This is a follow-up to my post from a few days about the Italian-Style Spaghetti Squash. I mentioned I would do do an entry about how it turned out (I know, this is probably not very exciting for many of you ;) My apologies...). Anyway, it turned out awesome! It is definitely something I'd make again; both of us enjoyed it. Unfortunately, because of the price of squash (it can be kind of pricey), it won't become a regular thing on our menu. Definitely good every so often though!
Jeremy really enjoyed it, which I was so happy about!
It was very tasty and actually quite filling (and very healthy!).
Digging out the "flesh" (I guess that is what it's called) of the squash was a bit messy and by the time I had it dug out, I had to re-heat the squash. I was also a bit rushed in making it since we had friends coming over prior to the party at Ray & Lara's. Next time, I'm going to add minced garlic to it and more herbs.
If you like spaghetti squash though, definitely give this recipe a try! The place I got the recipe (vegetariantimes.com) also has other great recipes for squash!
